Juniper syrup #1
- 1 cup granulated sugar
- 1 cup water
- 2 tablespoons crushed dried juniper berries

Juniper syrup #2
- 1 tbsp juniper berries
- 1 tsp coriander seeds
- 1 tsp fennel seeds
- 3 cardamom pods
- 2 cups (420 g) sugar
- 1 cup (250 ml) water
- 3 tbsp (45 ml) lime juice
Using a mortar and pestle, roughly grind the juniper berries, the coriander seeds, the fennel seeds and the cardamom pods. Place the spices in a pot. Add the sugar, the water and the lime juice.
Bring to a boil over medium heat and let simmer for 5 minutes. Strain.
Pour into an airtight container. Let cool, cover and refrigerate. The syrup will keep for 1 month in the refrigerator.

Ginger Turmeric Honey syrup
- 1.5 cups honey
- 1.5 cups boiling water
- .5 cup turmeric root in chunks
- .75 cup ginger root in chunks
- 2 tsp. each: ground coriander, ground cumin, paprika
- 1 tsp. ground cayenne
Add all to a blender covered with a towel, blend and strain through cheesecloth
